Soups

Chili

Spicy (as you want it), a bit sweet, and stock full of meat. Kate’s chili features beef, bacon, and turkey chili along with onions, two kinds of peppers, and spice in a rich tomato sauce. A crowd favorite, but that’s okay – it feeds a small army! Served with your choice of condiments, such as cheese, chips, rice, pasta, green onions, and sour cream.

Chicken Tortilla Soup

Mexican version of chicken soup, and quite possibly the best! Succulent chicken pieces, tri-colored peppers, and onions swimming in a tasty broth. The soup is ladled over tortilla chips and cheese. Recommended toppings are lime-scented avocado, chopped cilantro, and green onions.

Minestrone

Such a great soup we can’t choose which way we like it we like best – red or green. It’s like Christmas in Italy! The red is a tomato based vegetarian version full of vegetables and spices with ditalini pasta. The green version starts with a bit of bacon or ham and has all green vegetables with a bit of pasta in a savory chicken stock. Both are topped with a sprinkle of fresh herbs and parmesan cheese.

French Onion

A classic prepared that cannot be improved. Rich beef stoch and carmelized onions with hint of garlic and thyme. Topped with a round of cheesy toast.

Roasted Tomato Basil Soup

Using a variety of tomatoes for a full-flavor soup of oven-roasted tomatoes, basil, garlic, onions, and a hint of red pepper flake blended smooth with a dash of cream.
